INGREDIENTS
2 cups fresh basil leaves, chopped finely ½ cup Parmesano or Italian Cheese, Shaved ½ - 1 full garlic clove diced ½ cup olive oil 1 cup of chopped tomatoes or can of "petite" chopped tomatoes drained (save juice) thinly sliced bagels (or package of bagel snacks which are already sliced very thin). *Salt & pepper to individual taste *Sour cream on the side

INSTRUCTIONS
Using your Cuisinart food processor, combine the following: basil and garlic and pulse a few times until nicely mixed.Slowly add olive oil while the food processor is running. Stop and scrape down the sides of the food processor using a rubber spatula. Add grated cheese and pulse a few more times.Add salt and black pepper to taste. Turn off processor and fold in tomatoes. Now, spread each bagel half with a scoop of the mixuture. Sprinkle a small amount of cheese on top. Bake rounds at 350 degrees for approximately 20 minutes, or until the cheese on top begins to melt and the bagel edges are toasty. Serve on a platter with a bowl of sour cream for those who would like a dollop on top! Additional: experiment using various types of bagels, such as garlic, sesame seed, etc.
