INGREDIENTS
- 5 pound beef chuck roast
- 1½ cup beef broth
- 1½ Tbsp ground cumin
- 2 Tbsp Asian garlic chili sauce
- 3 tablespoon chili lime seasoning
- 2 Tbsp chili powder
- Salt and pepper to taste
- 1 large onion sliced into rings
- ½ garlic bulb peeled and smashed
- Sliced fresh jalepeno ( seeds and all)
- Fresh green onion
- 2Tbsp Sour cream or Greek yogurt
- A baked sweet potato per person
INSTRUCTIONS
1.Layer sliced onions on bottom of slow cooker
2.Place roast on top of onions.
3.Cook on low for 8-9 hours. High for 6-7 hours.
4.Shred beef with two forks and return to slow cooker. Allow to continue to cook in seasoned broth for 15-30 minutes
5.Stuff baked sweet potato with beef and top with sour cream or yogurt and diced green onion
