  • 5 pound beef chuck roast
  • 1½ cup beef broth
  • 1½ Tbsp ground cumin
  • 2 Tbsp Asian garlic chili sauce
  • 3 tablespoon chili lime seasoning
  • 2 Tbsp chili powder
  • Salt and pepper to taste
  • 1 large onion sliced into rings
  • ½ garlic bulb peeled and smashed
  • Sliced fresh jalepeno ( seeds and all)
  • Fresh green onion
  • 2Tbsp Sour cream or Greek yogurt
  • A baked sweet potato per person


1.Layer sliced onions on bottom of slow cooker
2.Place roast on top of onions.
3.Cook on low for 8-9 hours. High for 6-7 hours.
4.Shred beef with two forks and return to slow cooker. Allow to continue to cook in seasoned broth for 15-30 minutes
5.Stuff baked sweet potato with beef and top with sour cream or yogurt and diced green onion
