INGREDIENTS
3 TBsp olive oil 2 teaspoon salt 1 teaspoon pepper ½ teaspoon crushed red pepper 1 yellow onion 4 cloves of garlic ¼ cup parsley, chopped ¼ cup oregano, chopped 10 Roma tomatoes, chopped to about 1 inch ¾ cup vodka (split ½c and ¼c) ½ cup heavy cream

INSTRUCTIONS
Sauté onions and garlic in 1 TBsp olive oil and ½ teaspoon salt until the onions are translucent. Add tomatoes, parsley, oregano, 1½ teaspoon salt, pepper, and crushed red pepper. Cover and cook on med-high heat until tomatoes are cooked down (about 15-20 mins). Add 2 TBsp of olive oil and ½ cup vodka to the sauce. Leave uncovered on high heat until the sauce reduces and thickens (about 10 mins). Reduce the temperature to a simmer. Add heavy cream and remainder of the vodka. Simmer for 5 mins. Serve over cooked penne.
