INGREDIENTS
1 lb. Uncooked Lasagna noodles 2 Tabs, olive oil 1 lb. ground chuck beef 1 med. onion, chopped1 1 clove garlic, pressed 2 6 oz. cans tomato paste 1 teaspoon. parsley, dried 2 eggs 1 cup water 1 teaspoon. salt ½ teaspoon. pepper 2 cups Mozzarella Cheese, grated 1 lb. cottage cheese Grated Parmesan cheese
INSTRUCTIONS
Brown chuck in olive oil with onion, garlic and parsley. Add tomato paste, water, salt and pepper. Cover and simmer 1 and ½ hours. Add eggs to cottage cheese, mix well. Add lasagna noodles to 6 qtrs. boiling water and cook according to box directions. Drain. On thin layer of tomato mixture, add layer of noodles, then cottage cheese mixture. Followed by layer of Mozzarella. Repeat layers. Sprinkle with Parmesan Cheese. Cover and bake at 375 degrees for 25-30 minutes. Remove cover last 10-15 minutes of baking. Freezes well.
