Turkey carcass & skin, neck onion, celery, parsley, carrots parsnip peppercorns (10) bay leaves (4) water, sea salt organic chicken stock/broth

INSTRUCTIONS
put all of turkey carcass, bones, skin and neck into a large pot and cover with water. Add all other ingredients except chicken stock. Bring to a boil and turn to simmer. After 1 hour, turn off the heat and let stand until cool. Strain off all fat and remove everything from the soup. (can cool/refrigerate overnight) Add chicken stock and unboiled meat and bring to a boil - remove from heat and cool or serve. May also add noodles or rice in the last step if desired.
