¼ cup whole milk ricotta cheese 2 large eggs 1 Tbs real maple syrup ½ teaspoon vanilla extract 1 Tbs butter 2 cups fresh berries, lightly smashed maple syrup, for topping

INSTRUCTIONS
1.In a medium sized bowl vigorously mix together the ricotta, eggs, 1 Tbs maple syrup and vanilla extract. 2.Heat a nonstick pan over medium and add ½ Tbs butter. When the butter has melted pour half of the batter into the pan. After the first side has set, about 3 minutes, flip and cook the other side for 2-3 minutes. 3.Top with mashed berries and additional maple syrup. Serve and enjoy!
