INSTRUCTIONS
Preheat Cuisinart™ Griddler in the open griddle position to 350°F. Shred cheese. (You may do this by hand, or use a Cuisinart® Food Processor fitted with the 4-mm shredding disc.) There will be about 3 cups shredded cheese - do not pack down. Using a tablespoon measure, drop the shredded cheese in rounds on the hot griddle, about 5 to 6 per side. Allow the cheese to cook and bubble until it is lacy and amber in appearance, about 6 to 7 minutes. Using a heatproof thin plastic spatula carefully lift the crisps up from the hot Griddler. Place on a triple layer of paper to cool slightly before serving - or drape over a rolling pin and allow to cool for slightly "curled" crisps.
