INGREDIENTS
- 1 head of cauliflower
- 2 teaspoon salt
- 1 teaspoon black pepper
- ½ tablespoon paprika
- 1 teaspoon garlic powder
- pinch oregano
- 2 tablespoon avocado oil
FOR THE PICO:
- 5 roma tomatoes
- ½ red onion
- ¼ finely chopped cilantro
- juice of 1 lime
- ½ teaspoon cayenne pepper or chili powder
- salt and pepper to taste

INSTRUCTIONS
- Preheat oven to 400 degrees F. Chop cauliflower into florets & add into baking tray. Sprinkle seasonings and drizzle avocado oil. Toss until evenly coated and spread into a single layer. Roast for 30 minutes. Once cauliflower is done warm up corn tortillas and begin to assemble your tacos. Top it off with some pick and more lime juice is desire!
- PICO: remove seeds from tomatoes. Dice onion and tomatoes and add into a bowl with the chopped cilantro. Season with salt, pepper & cayenne pepper. Squeeze lime juice and mix.
