Harry's (dede's) famous Holupcie (cabbage rolls)Ingredients: 1 medium to large cabbage 1 lb Sausage meat (can be bought as bratwurst ( 2 pkg ) and remove skin. 3 slices bacon, (chopped into small pieces) 1 medium onion (chopped) 1 medium green pepper (chopped) 1 Medium fresh tomato (chopped) 2 cups rice (I found Uncle Tom’s long grain is best, however you should rinse to wash out starch. Spices: 1 chicken oxo cube or pkg. Plenty of fresh dill (3 bought packages) Dash of salt Pepper to your liking Celery seed (just to say you did) 1 tablespoon Minced garlic (good for your health) Splash of Worchester sauce

INSTRUCTIONS

Sautee sausage meat and add bacon. Add a little vegetable oil if necessary. (Do not over cook) Put in large pot along with the fat from sausage and bacon. Meantime, cook rice according to instructions, but add the chicken cube as well Sauté onion and pepper in butter and throw into pot. Add tomato and Worcestershire. When rice is cooked, add to pot. Chop dill and add to pot with remaining spices. TASTE, TASTE, TASTE! If it does not taste good, throw it out and start over or add your own ingredients. Remove “katchong” (which is the core of the cabbage) and eat it raw or give to dog (it is a healthy snack) Put large meat fork in cored end and put in large pot of steaming (not boiling) water. Using meat fork, twirl the cabbage until the leaves start to come off Remove cabbage leaves and let cool on a cookie tray. Let everything cool I leave the leaves the same size as they are, it makes large and small cabbage rolls. “Note” you may have to carefully slice the large vein from the back of the cabbage leaf. Take leaf in hand and put as much of the rice mixture as possible inside and roll and fold in ends and then roll from front to back. Line bottom of roast pan with all the cabbage you cannot use to make the rolls. Pack snuggly each roll into the roast pan. I get two layers in my pan (depending on size). The final step is to mix a can of tomato soup with a can of tomato juice and pour on top to approximately ⅓ to ½ full. Place in a 300° oven for about 1 ½ hours.
