Ingredients
- 6 slices bacon
- 1 small sweet onion, coarsely chopped
- 1 can (10 ounces) diced tomatoes and green chilies
- 12 ounces pasteurized processed cheese, cut into chunks
- 1 cup shredded sharp cheddar cheese
- 1 package (16 ounces) frozen corn
- Chopped cilantro
- Chopped chives
- Tortilla chips
Directions
- In a medium skillet over medium-high, cook bacon until crisp. Remove bacon and drain on paper towels. Crumble and set aside. Add chopped onions to bacon drippings and sauté until tender.
- With a slotted spoon, transfer onions to slow cooker crock. Add bacon, tomatoes, cheeses and corn.
- Cover slow cooker and cook on HIGH for 2 hours or LOW for 2 to 3 hours or until cheese is melted. Top with chopped cilantro and chives.
- Serve with tortilla chips
