Boil the entire box of pasta. While the noodles are cooking, mince the carrots and pickles in a food processor. Use a pulse setting, so they are not minced too finely. Put the prepared veggies, along with the rest of the ingredients in a bowl. Once the pasta is cooked, rinse it in cold water. Add the rotini to the bowl with the other components, and mix. This is a fast recipe that can be made in about 20 minutes or less! I love using my Cuisinart food processor! It saves so much time, as it can dice up things in seconds. No more sitting at a cutting board for half the day. By the time the pasta is done boiling, all the other ingredients are prepared and ready to mix. This fast pasta salad is great to prepare in the evening for lunch the next day. It is also nice, because it will last a few days in your refrigerator, and can be enjoyed more than once.
