INGREDIENTS
2 C flour 2 teaspoon baking powder ½ teaspoon salt 8 oz cream cheese softened (I use lowfat) 1 stick butter, melted 1½ c sugar 2 eggs 2 teaspoon vanilla 2 c fresh or frozen blueberries 3 tablespoon sugar 1½ teaspoon cinnamon
INSTRUCTIONS
Preheat oven to 350, grease a 13x9x2 pan Mix together flour, powder, and salt in a small bowl In mixer bowl, beat cream cheese and butter until creamy, add sugar, beat until combines. Add eggs, one at a time, until blended well. Add flour slowly, beating until well combined. Add vanilla, then fold in blueberries. Spread in pan. Mix together remaining sugar and cinnamon, and sprinkle on top. Bake 50-60 minutes until toothpick inserted in middle comes out clean. Cool on rack, then cut and eat! Be prepared, it's HARD to eat only one piece. I have also made this with fresh cherries, and peaches, drained well.
