INGREDIENTS

1 TBS OLIVE OIL 1 LB LOW FAT GROUND TURKEY, OR TURKEY BREAST FOR EVEN LESS FAT 1 CUP CHOPPED ONION 2 CLOVES OF FRESH GARLIC, MINCED 2 TSP SALT 2-4 TSP CHILI POWDER 2 TSP GROUND CUMIN 1-28 OZ CAN OF CHOPPED TOMATOES IN JUICE 1-15-19 OZ CAN WHITE KIDNEY BEANS, ITALIAN CANNELLONI. PLAIN YOGURT OR LITE SOUR CREAM FOR TOPPING

INSTRUCTIONS

1.IN A LARGE PAN, ON HIGH HEAT, SAUTE THE ONION, GARLIC, SALT AND GROUND TURKEY IN THE OLIVE OIL UNTIL THE TURKEY LOSES ITS PINK COLOR, BREAKING UP THE TURKEY WITH THE EDGE OF YOUR SPOON. COOK ABOUT 10-12 MINUTES. ADD THE CHILI POWDER AND CUMIN AND COOK 1 ADDITIONAL MINUTE.
2.STIR IN THE TOMATOES AND THEIR JUICE, BEANS THAT HAVE BEEN RINSED,AND DRAINED AND ½ CUP WATER. BRING TO THE BOIL AND SIMMER, UNCOVERED FOR 10 MINUTES, STIRRING OCCASIONALLY. SERVE IN BOWELS TOPPED WITH A DOLLOP OF EITHER YOGURT OR SOUR CREAM.
