INGREDIENTS
- 2 lbs. forzen hash browns
- ½ cup butter, melted
- 2 cups sour cream (use 1 cup Mascarpone and 1 cup sour cream)
- 1 teaspoon. salt and pepper to taste
- 2 cups grated cheddar cheese
- ½ cup onion, chopped fine and caramelized in butter
- 1 can cream of chicken soup

Mix all ingredients together. Place in buttered 9 x 13 casserole dish. Bake at 350 F for 45- 60 minutes.
