3 boneless chicken breasts 1 large red onion sliced 3 cloves minced garlic 10 marinated artichokes, chopped and drained 3 cups chicken broth 1½ cup cream 1 cup parmesan

In a large sauté pan sauté sliced onion with a little olive oil, add chopped artichokes. Sauté until onions are soft, add garlic and 1 cup chicken stock. Then add broth as broth reduces. I another pan with a little olive oil cup chicken up in bite site pieces, sprinkle with Greek season. Sauté on high until outside of chicken is golden brown. Add chicken to artichoke mixture. Simmer until chicken is cooked through. Add cream and parmesan, simmer until slightly reduced. Serve over your favorite cooked pasta.
