20 Pancakes

INGREDIENTS

  • 1 medium apple, peeled, cored, and cut in half 
  • 2 cups unbleached, all-purpose flour 
  • ½ teaspoon salt 
  • 2 teaspoons baking powder 
  • 1 teaspoon baking soda 
  • 1 teaspoon ground cinnamon 
  • ⅓ cup granulated sugar 
  • 2 large eggs 
  • 1¾ cups milk 
  • 4 tablespoons unsalted butter, melted 
  • 1 tablespoon cinnamon sugar 
  • 1 tablespoon unsalted butter for cooking apples 
  • powdered sugar 
  • pure maple syrup

INSTRUCTIONS

Place a 12-inch nonstick skillet over medium heat. Trim bottom of apples so they sit straight in the feed tube of the Cuisinart® food processor. Slice apples with the 4mm slicing blade. 

Remove and transfer to 12-inch skillet with cinnamon sugar and 1 tablespoon of butter. Cook apples slices over medium-low heat until soft and slightly caramelized about 8 to 10 minutes. Remove and reserve and wipe out pan with a paper towel and keep pan over low heat. 

While apples are cooking, stir together dry ingredients in a mixing bowl. Preheat oven to 200°F. Line a baking sheet with a metal cooling rack. 

Place the metal chopping blade in the work bowl and add the eggs. Process for 20 seconds. With the machine running slowly add the milk and melted butter. Pour dry ingredients evenly over wet ingredients and pulse until mixture comes together. Scrape bowl and pulse again to completely incorporate all ingredients. Be careful not to overmix. 

Place 1 apple slice in the skillet and pour ¼ cup pancake batter over the slice. In a 12-inch skillet 4 pancakes can be cooked together. Cook pancakes 4 minutes per side or to desired doneness. 

Serve immediately or place cooked pancakes on prepared cooling rack/baking sheet and keep warm until all are cooked. 

Serve with powdered sugar and pure maple syrup.
