Ingredients
- 4 medium zucchini
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 4 pounds plum tomatoes, cored and chopped
- 1 small jalapeno pepper, chopped
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/2 teaspoon coarse black pepper
- 1/2 cup fresh cilantro, chopped
- 3 ounces feta cheese, crumbled
Directions
- Using a spiralizer, make spirals of zucchini; set aside.
- In a large skillet over medium-high, heat oil. Add onion and garlic. Cook until tender, 1 to 2 minutes.
- Add tomatoes, jalapeno, cilantro, salt, cumin, and black pepper. Cook until tomatoes are tender, about 5 minutes. Fill a large saucepan two-thirds full of water. Over high heat, boil water. Add zucchini spirals. Cook until tender, about 15 to 30 seconds. Drain and arrange on plates.
- Top with warm salsa and sprinkle with feta cheese.
