INGREDIENTS
- 6 medium cucumbers
- 1 cup thinly sliced red onion
- 1 cup chopped fresh dill
- 1 1/4 cups sugar
- 1 cup apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon coarse black pepper
- 1/4 teaspoon dried crushed red pepper
DIRECTIONS
- Using a spiralizer, make ribbons of cucumbers; set aside. In a large bowl. combine cucumbers, onion and dill.
- In a small saucepan over medium-high heat, bring sugar, vinegar, salt, pepper and red pepper to a rolling boil.
- Pour vinegar mixture over cucumbers. Stir mixture until well blended. Cool at room temperature.
- Cover and refrigerate overnight to blend flavors.
