Ingredients
Salsa chicken:
- 2 lbs chicken breast
- 1 15oz jar of salsa
- 1 tbsp olive oil
Taco salad ingredients:
- lettuce
- carbohydrate of choice
- diced bell pepper
- cherry tomatoes
- avocado
- juice of lime
- hemp seeds (optional)
Directions
- Add chicken breast, jar of salsa and olive oil to a 5-6 quart slow cooker.
- Cook on low for 6-7 hours, or high for 3-4 hours.
- Once the chicken is done, remove the chicken and place in a bowl. Use the Hamilton Beach Professional Hand Mixer with Easy Beaters to shred the chicken, then place back in the slow cooker to mix with the remaining salsa.
- Gather your salad ingredients in a bowl with the salsa chicken. Mix together the avocado and lime as a creamy dressing and enjoy!
